This Thai Green Curry Chicken uses coconut milk and authentic Thai herbs. The green curry paste and bamboo shoots can be found in the ethnic section of most big grocers. The Makrut lime leaves and Thai basil will be harder to find. If you do not have an Asian grocer nearby, you can substitute both with regular basil.
Substitutions: The recipe calls for palm sugar. This can be substituted with a low carb sweetener of your choice. If you are cautious of higher carb vegetables, you can substitute the bamboo shoots and red bell pepper for lower carb options like eggplant, broccoli, zucchini or cauliflower. Spinach is also a great addition.
